The individual walks contained within our book, 50 Great Walks in the Chilterns, are now available to download via Viewranger – an exciting app that allows you to access trails and maps from your smartphone or tablet. Masterclass in BreadmakingMasterclass in Breadmaking

The course objective is to learn how to make traditional English tin bread by hand using minimal equipment. You will also learn about the science behind the ingredients, recipe and method used. You will make an oven bottom bloomer and plaited loaf using a prefermented dough and you will also learn about sourdough bread and take one home to eat. The course is hosted by Paul Barker who has 30 years of baking experience. Coffee or tea is served on arrival and the price includes a buffet style lunch/meal plus wine is included. You will leave the course with bags of your freshly baked bread!

Hedge LayingHedge Laying

Hedge-laying is the ancient craft of creating a living, natural boundary to a livestock field or garden. Using little more than a chopping tool called a billhook, an experienced hedge-layer can create 20 metres of laid hedge in a day, the natural old-fashioned way to stock-proof your field for sheep or cattle. On this very hands-on course, our expert Ian Gosling will work alongside you to create a new laid hedge – everything from preparing the ground, to cutting wooden stakes and hazel bindings, to the skilled art of ‘pleaching’ – slicing the stem of a tree just enough to keep it alive and make it supple enough to become part of the laid hedge. We will provide the equipment but you will need sturdy boots.
